* Exported from MasterCook * Brown Derby House Salad /w Citrus Vinaigrette Recipe By :Posted by Tiffany at recipegoldmine.com - via Mysticalmom @ Vernalisa's Recipe Exchange Serving Size : 2 Preparation Time :0:15 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups greens -- baby greens; field greens mix 4 each Boston lettuce leaf -- 4-6 leaves 2 radicchio leaves 4 Belgian endive leaves 3 plum tomatoes -- cut in half 8 slices cucumber slices -- English cuke (seedless type) 1 small red onion -- very thinly sliced; as desired 6 baby carrots -- julienned; as desired Dressing: Makes 1 1/2 cups/serves up to 6. 1/2 medium lemon -- juiced 1/2 medium orange -- juiced 1/4 medium lime -- juiced 1 tablespoon balsamic vinegar 1/2 tablespoon Dijon mustard apple cider vinegar -- to make 1/2 cup with juices 1/2 cup extra virgin olive oil 1/2 cup salad oil 1/2 teaspoon lemon zest 1/2 teaspoon orange zest 1/2 teaspoon lime zest salt -- to taste fresh ground black pepper -- to taste To make salad, combine all ingredients in bowl. Toss with citrus vinaigrette before serving. To make dressing, in measuring cup, combine all juices and balsamic vinegar. Add enough apple cider vinegar to make 1/2 cup. Pour into mixing bowl or blender, with mustard. Slowly incorporate oils while mixing. Add the zests, and season with salt and pepper. Thomas do you have the Brown Derby meatloaf recipe? I know it has carnation milk in it as I made it 30 some years ago and would love to try it again. Plain and excellent for sandwiches. (Message edited by jacqui on October 17, 2006)

Jacqui: Amazon.com has two "The Brown Derby Cookbooks" for sale; you can get one for about $20.00. Alibris.com has a lot of them from about $25.00 up to hundreds. Freddie
