Chang's Imperial Black Cod Recipe Posted By : Jacqui@RQ Serving Size : 0 Preparation Time :0:00 Categories : Seafood Kosher Salt to Taste 8 oz. Black Cod 1/2 inch dice 1/2 tsp. Shaoxing Wine (can substitute Sake or Sherry) 1/2 tsp. Cornstarch 1 tsp. Vegetable Oil 1/2 tsp. Sesame Oil 1/2 tsp. Garlic -- minced 1/2 oz. Red Bells Peppers -- 1/4 inch dice 5 1/2 oz. Shiitake Mushrooms 1/4 inch dice (can substitute other mushrooms) 3 oz. Soybeans -- shelled (can substitute Fava Beans) 2 Fl. oz. Abalone Sauce (can substitute oyster sauce) 3 Tb Toasted Pine Nuts Bring a small pot of water to a boil then add Kosher Salt to taste. Add Soybeans and simmer very slowly for 20 minutes. Drain, then set aside. Meanwhile 1/2 inch dice the Black Cod and mix with Wine and Cornstarch Heat at hot until smoking then add Vegetable Oil and Sesame Oil Add Garlic and Black Cod and gently stir fry briefly (approx 20-30 seconds). Add Red Bell Peppers, Black Mushrooms, Soybeans then stir-fry briefly until all ingredients are warm (approx 20 to 30 seconds). Add Abalone Sauce and Pine Nuts then toss quickly and serve immediately.
